I love Italian food and nothing is going to stop me. A lot of Americans view it as being unhealthy but really everything is about portion control. For a light lunch with friends, I made a lemon penne dish with fresh basil, asparagus, tomatoes, and mozzarella.
I started by boiling the water before adding gluten free penne. While that started boiling, I roasted the asparagus.
Then I add shallots and garlic into a pan with butter, wine, and lemon.
I chopped up my basil, tomatoes, and mozzarella. I strained the pasta and tossed it together.
Now serve and enjoy!
