Overnight Oats

Overnight Oats have become my overnight happiness! It's so easy to make ( Thanks, Gwen!) and tastes delicious. I've actually been on a pretty strict diet lately due to some a couple projects I'm attached to right now. That is also an exciting update that I will share later.  In fact, later this month, this blog will receive a bit of a make over. But, back to Overnight Oats.

Overnight Vanilla-Orange Steel Cut Oatmeal

serves 4 big portions

2 cups steel cut oats

2 cups almond milk

Juice of 1 orange

1 tablespoon chia seeds

2 tablespoons maple syrup

1/2 teaspoon ground cinnamon

1 teaspoon vanilla extract

1/2 teaspoon french vanilla extract (or sub in more vanilla extract)

Mix all ingredients together in a seal-able container and place in the refrigerator overnight.

Because I've been on a pretty strict diet, I don't use maple syrup. I'm currently not consuming dairy, gluten, sugar, or alcohol. I use unsweetened almond milk as well. I do add goji berries for a bit more sweetness.
